Patagonian Scallop Coconut Curry
4. Patagonian Scallop Coconut Curry:
Ingredients:
400 g Patagonian Scallops (for 5 persons)
1 can of coconut milk
Red curry paste
Vegetables of your choice (e.g. bell pepper, broccoli, green beans)
Fresh coriander, finely chopped
Steamed rice
Salt and pepper to taste
Preparation:
Fry the red curry paste in a pan until fragrant. Add the vegetables and fry briefly.
Pour the coconut milk into the pan and bring to the boil.
Add the Patagonian Scallops and simmer until cooked through.
Serve the curry with steamed rice, sprinkled with fresh coriander.
